Mushroom Risotto

This Mushroom Risotto is a creamy, earthy dish that’s pure comfort food. Arborio rice absorbs rich flavors from mushrooms and Parmesan.
It’s a bit hands-on but worth the effort for a restaurant-quality meal at home.

Ingredients
- 1 1/2 cups Arborio rice
- 400 g mixed mushrooms, sliced
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth, warmed
- 1/2 cup white wine
- 1/4 cup grated Parmesan cheese
- 2 tbsp butter
- Salt and pepper to taste
- 1 cucumber
Instructions
- Heat olive oil in a large pan. Sauté onion and garlic until soft.
- Add mushrooms, cook until browned, about 5 minutes.
- Stir in rice, cook for 1 minute. Add wine, stir until absorbed.
- Add warm broth 1/2 cup at a time, stirring until absorbed before adding more.
- Continue for about 20 minutes until rice is creamy and al dente.
- Stir in butter and Parmesan. Season with salt and pepper.
