Lemon Garlic Roasted Chicken

Ingredients
  • 1 whole chicken, about 1.5 kg
  • 2 tbsp olive oil
  • 1 lemon, halved
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1 cucumber
Instructions
  1. Preheat oven to 375°F (190°C).
  2. Rub chicken with olive oil, season with salt, pepper, thyme, and rosemary.
  3. Place lemon halves inside the chicken cavity.
  4. Spread minced garlic over the chicken.
  5. Roast for 1 hour or until internal temperature reaches 165°F (74°C).
  6. Let rest for 10 minutes before carving.
