Mushroom Risotto

Ingredients
  • 1 1/2 cups Arborio rice
  • 400 g mixed mushrooms, sliced
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth, warmed
  • 1/2 cup white wine
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 cucumber
Instructions
  1. Heat olive oil in a large pan. Sauté onion and garlic until soft.
  2. Add mushrooms, cook until browned, about 5 minutes.
  3. Stir in rice, cook for 1 minute. Add wine, stir until absorbed.
  4. Add warm broth 1/2 cup at a time, stirring until absorbed before adding more.
  5. Continue for about 20 minutes until rice is creamy and al dente.
  6. Stir in butter and Parmesan. Season with salt and pepper.
